Strawberry Soup is sweet and summery, with the delicate fruity flavor of strawberry pairing with tangy lemon brightness and floral vanilla in a smooth, sippable soup. Ingredients
- 4 cups fresh strawberries, plus more, to taste, sliced, for garnish
- 1 cup ginger ale
- 1 cup sugar
- 1/4 cup milk
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup sour cream
- heavy cream, optional, to taste, for garnish
Directions
Step 1 -In a blender or a food processor, add 4 cups of the strawberries and blend until smooth.
Step 2 -Add the ginger ale, the sugar, the milk, the lemon juice, and the vanilla and blend until smooth and combined.
Step 3 -Pour the strawberry mixture into a mixing bowl.
Step 4 -Add the sour cream and whisk until smooth.
Step 5 -Cover and chill the strawberry mixture for at least 2 hours.
Step 6 -When ready to serve, ladle the soup into serving bowls, top with the extra sliced strawberries, and drizzle with the heavy cream.
Step 7 -Serve.
