Ingredients

  • flour, to taste, for dusting a work surface
  • 1 (9-inch) pie crust, store-bought or homemade
  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon lemon zest, plus 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 egg, beaten
  • 1 teaspoon brown sugar
  • vanilla ice cream, optional, to taste, for serving

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Line a quarter sheet baking pan with parchment paper.

Step 3 -Using the flour, lightly dust a work surface.

Step 4 -Add the pie dough to the prepared work surface and, using a rolling pin, roll it into a round 10-inch circle. If using store-bought frozen pie dough, let it defrost before rolling it out, about 20 minutes.

Step 5 -In a large bowl, add the strawberries, the granulated sugar, the lemon zest, the lemon juice, and the cornstarch and toss well to combine.

Step 6 -Evenly add the strawberry filling mixture onto the center of the rolled pie dough circle, leaving a 2-inch border around the edges.

Step 7 -Fold all of the dough edges over the strawberry filling mixture.

Step 8 -Carefully transfer the galette onto the prepared baking pan and with a pastry brush, brush the beaten egg over the folded edges of the dough.

Step 9 -Evenly sprinkle the dough with the brown sugar.

Step 10 -Bake until the crust is golden-brown, about 25 minutes.

Step 11 -Transfer the baked galette from the oven to a wire rack and let it rest before serving, about 15 minutes.

Step 12 -With a sharp knife, cut the galette into slices and serve with the ice cream.
