Ingredients

  • For the lemon poppy seed dressing:
  • 1/2 cup light mayonnaise
  • 1 tablespoon lemon zest plus 3 tablespoons fresh lemon juice
  • 3 tablespoons honey
  • 2 1/2 teaspoons poppy seeds
  • 1/4 teaspoon salt
  • For the salad:
  • 1 pound chicken breasts, boneless and skinless, grilled and cooled, diced
  • 8 ounces baby spinach
  • 2 1/2 cups strawberries, sliced
  • 3/4 cup walnuts, lightly toasted and chopped
  • 1 large avocado, diced
  • 4 ounces feta cheese, crumbled
  • 1/3 cup red onion, chopped

Directions

Step 1 -Whisk the mayonnaise, the lemon zest, the lemon juice, the honey, the poppy seeds, and the salt in a mixing bowl until well-combined.

Step 2 -Cover and refrigerate the dressing until ready to serve.

Step 3 -In a large salad bowl, layer the chicken and the spinach.

Step 4 -Layer on the strawberries, the walnuts, the avocado, the feta cheese, and the red onion.
