Ingredients
- For the dip:
- 1 1/2 cups white acre peas, cooked
- 1 (15-ounce) can black beans, drained and rinsed
- 1 1/2 cups tomatoes, finely chopped
- 1 1/2 cups fresh corn kernels
- 1/2 cup Vidalia onion, finely diced
- 1 medium red bell pepper, finely diced
- 1 medium green bell pepper, finely diced
- 1 medium yellow or orange bell pepper, finely diced
- 2 jalapeños, optionally seeded and deveined, finely diced
- 1/2 cup cilantro or parsley, finely diced
- 1 avocado, chopped
- For the dressing:
- 4 tablespoons fresh lime juice
- 1 tablespoon red wine vinegar
- 2 cloves garlic, grated
- 4 tablespoons extra-virgin olive oil
- 1 teaspoon kosher salt, plus more, to taste
- 1/4 teaspoon ground black pepper, plus more, to taste
Directions
Step 1 -In a large bowl, add the peas, the black beans, the tomatoes, the corn, the onions, the red bell peppers, the green bell peppers, the yellow bell peppers, the jalapeños, and the cilantro and mix to combine.
Step 2 -Combine the lime juice, the red wine vinegar, the garlic cloves, the olive oil, 1 teaspoon of the salt, and 1/4 teaspoon of the pepper in a sealable jar, cover, and shake well.
Step 3 -Add the dressing to the bean mixture and mix well.
Step 4 -Just before serving, add the avocado and the extra salt and the extra pepper, as needed, and stir to combine.
Step 5 -Serve cold. The dip can be tightly covered and stored in the refrigerator for up to 4 days.
