Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 green bell pepper, diced
- 3/4 cup barbecue sauce
- 1 cup frozen corn kernels
- 2 cups pulled pork, homemade or store-bought
- kosher salt, to taste
- black pepper, to taste
- 1 cup cheddar cheese, grated, divided
- 1 (8.5-ounce) box corn muffin mix, plus the ingredients called for on the package
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Lightly grease a 2-quart baking dish.
Step 3 -In a large skillet or Dutch oven over medium-high heat, add the olive oil.
Step 4 -Add the onions and the bell peppers to the hot oil and cook, while stirring, just until the onions are translucent and the bell peppers are tender, about 5 minutes.
Step 5 -Reduce the heat to low.
Step 6 -Add the barbecue sauce to the onion mixture and simmer, while stirring, until the sauce thickens slightly, about 1-2 minutes.
Step 7 -Add the frozen corn and the pulled pork to the onion mixture and stir to combine.
Step 8 -Taste the pork mixture for seasoning and add the salt and the black pepper, as needed.
Step 9 -Add the pork mixture to the prepared baking dish and spread it out evenly.p
Step 10 -Sprinkle the pork mixture evenly with 1/2 cup of the grated cheddar cheese.
Step 11 -In a separate bowl, prepare the cornbread batter according to package directions.
Step 12 -Add the remaining cheddar cheese to the cornbread batter and stir to combine.
Step 13 -Spread the cornbread batter over the pork mixture in the baking dish.
Step 14 -Bake until the crust is golden-brown and cooked through, about 30-35 minutes.
Step 15 -Let the bake stand for 5-10 minutes.
Step 16 -Serve.
