Ingredients

  • 1 tablespoon olive oil
  • 8 chicken thighs, bone-in, skin-on
  • salt, to taste
  • pepper, to taste
  • 3/4 cup ketchup
  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 3 tablespoons garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/4 teaspoon dried mustard
  • 2 tablespoons parsley, optional, chopped

Directions

Step 1 -In a cast-iron skillet over medium heat on the stove-top, heat the olive oil.

Step 2 -Season the chicken thighs with salt and pepper.

Step 3 -Sear the chicken in the skillet, skin side down, until golden.

Step 4 -Transfer the chicken from the skillet to the slow cooker, skin side up.

Step 5 -In a medium-sized bowl, combine the ketchup, soy sauce, honey, garlic, onion powder, dried thyme, dried parsley, and dried mustard.

Step 6 -Once combined, pour the mixture over the chicken in the slow cooker.

Step 7 -Place the lid on the slow cooker and cook on high until the chicken is cooked through and the sauce has thickened, for about 3 hours.

Step 8 -Plate the chicken, pour some of the sauce on top, garnish with parsley, and serve!
