Ingredients

  • 2 pounds chicken thighs, boneless and skinless, trimmed
  • salt, to taste
  • pepper, to taste
  • 1 cup jarred salsa
  • juice of 1 lime
  • 1/4 cup cilantro, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • cooked rice or tortillas, optional, to taste, warm, for serving

Directions

Step 1 -Spray a slow cooker with cooking spray.

Step 2 -Season the chicken thighs with the salt and the pepper.

Step 3 -Place the chicken thighs in the slow cooker.

Step 4 -In a large bowl, mix the salsa, the lime juice, the cilantro, the chili powder, the cumin, the honey, and the garlic together.

Step 5 -Pour the salsa mixture over the chicken thighs and turn to coat them.

Step 6 -Cover and cook on low heat until the chicken thighs are fall-apart tender, about 3-5 hours.

Step 7 -Turn the slow cooker's "warm" feature on.

Step 8 -Shred the chicken thighs using two forks.

Step 9 -Serve the chicken over the rice or with the tortillas.
