Ingredients

  • 1 pound red potatoes
  • 1/2 medium onion, chopped into chunks
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 3-4 eggs
  • 1/2 cup cheddar cheese, shredded
  • parsley, chives, and other fresh herbs, optional, to taste, for topping

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Cut the potatoes in half lengthwise and then in half again lengthwise.

Step 3 -Dice the potato quarters into 1/2-inch pieces.

Step 4 -Add the potatoes and the onion to a sheet pan.

Step 5 -Add the garlic, olive oil, paprika, salt, and pepper flakes.

Step 6 -Toss everything together until the potatoes and onions are coated.

Step 7 -Bake for 10 minutes.

Step 8 -Stir and flip the potatoes.

Step 9 -Bake until the potatoes are tender, about 10-15 minutes.

Step 10 -Transfer the sheet pan from the oven.

Step 11 -Create a well in the center of the sheet pan.

Step 12 -Crack the eggs in the middle.

Step 13 -Sprinkle the cheese over the eggs and potatoes.

Step 14 -Bake until the egg whites have set and the egg yolks reach the desired firmness, about 7-12 minutes.

Step 15 -Transfer the sheet pan from the oven.

Step 16 -Sprinkle the herbs on top.

Step 17 -Serve.
