Why is this called the Porcupines Skillet? It could be called anything and let's be honest, this dish doesn't resemble a spiny woodland creature at all. But wait! Porcupines Skillet is based on Porcupine meatballs, which mix meatballs with rice! And this delicious skillet serves up beef and rice, as well as tender mushrooms and melty cheese! So, it all does make sense. Tasty, tasty sense! Hooray!

Ingredients

  • 1 pound ground beef
  • 1 (1-ounce) package dry onion soup mix
  • 1 1/2 cups hot water
  • 1 (16-ounce) can diced tomatoes, drained
  • 1 (4-ounce) can mushrooms, optional, sliced or stems and pieces, drained
  • 3/4 cup long-grain rice
  • 1 cup Colby-Jack or cheddar cheese, shredded

Directions

Step 1 -In a large skillet over medium-high heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes.

Step 2 -Drain the excess fat from the skillet.

Step 3 -Add the onion soup mix, the water, the tomatoes, and the mushrooms to the beef and stir to combine.

Step 4 -Add the rice to the beef mixture and stir to combine.

Step 5 -Cover the skillet and reduce the heat to low.

Step 6 -Cook until the rice is tender and the liquid is completely absorbed, about 25 minutes.

Step 7 -Sprinkle the beef mixture with the cheese and cover the skillet.

Step 8 -Turn off the heat.

Step 9 -Allow the cheese to melt, about 5 minutes.

Step 10 -Serve.
