The "Piccadilly®" in Piccadilly Soufflé comes from Piccadilly Cafeteria, a chain of eateries from Louisiana. While known for plenty of great dishes, the Piccadilly Soufflé is perhaps their best known and most beloved. Fortunately, this is a dish you can make easily at home! The vibrant orange from the bright, sweet carrots is what makes this treat distinct. It boasts that tender, almost cake-like texture that will wow your tastebuds! A little powdered sugar on top helps to make the sweetness all the more comforting! Serve yourself up a little sunset-colored scrumptiousness!
Ingredients
- 3 1/2 pounds carrots, peeled
- 2 1/2 cups sugar
- 1 tablespoon baking powder
- 1 tablespoon vanilla extract
- 1/4 cup all-purpose flour
- 6 eggs
- 1/2 pound butter, softened
- 1 tablespoon powdered sugar, for topping
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a pot, steam or boil the carrots until they are extra soft, about 10-12 minutes.
Step 3 -Drain the carrots well.
Step 4 -While the carrots are still warm, add the sugar, the baking powder, and the vanilla.
Step 5 -Whip the carrots with an electric hand mixer until smooth.
Step 6 -Add the flour to the carrot mixture and mix well.
Step 7 -Whip the eggs in a small bowl with an electric hand mixer.
Step 8 -Add the eggs to the carrot mixture and blend well.
Step 9 -Add the softened butter to the carrot mixture and blend well.
Step 10 -Pour the carrot mixture into a 9x13-inch baking dish.
Step 11 -Bake until the top of the soufflé is a light golden-brown, about 1 hour.
Step 12 -Sprinkle the top lightly with the powdered sugar.
Step 13 -Serve.
