It's actually a combination of scrambled and sunny-side up eggs all in the same dish, so it's twice the egg-cellence of other boring breakfasts. It has succulent ham and tender potatoes to really offer the complete breakfast package in just one skillet. One-Great-Morning Skillet is more than a great morning! Ingredients

  • 2 tablespoons oil
  • 3-4 medium red potatoes, diced
  • salt, to taste
  • pepper, to taste
  • 1 cup ham, cooked and chopped
  • 2 bell peppers, chopped
  • 4 eggs, divided
  • 1 cup cheese, of your choice, shredded
  • 1 green onion, sliced

Directions

Step 1 -In a large skillet over medium-high heat, add the oil.

Step 2 -Add the potatoes to the hot oil and season them with the salt and the pepper.

Step 3 -Cook the potatoes until tender on the inside and crispy on the outside, about 6-8 minutes.

Step 4 -Add the ham and the bell peppers and cook just until the peppers are crisp-tender, about 3-4 minutes.

Step 5 -Push the ham-pepper mixture to one side of the pan.

Step 6 -Crack 2 of the eggs in the open space in the pan and cook, while scrambling, to your desired doneness.

Step 7 -Mix the scrambled eggs and the ham-pepper mixture together.

Step 8 -Make 2 wells in the egg mixture.

Step 9 -Crack 1 of the remaining eggs into each of the wells in the egg mixture and season them with the salt and the pepper.

Step 10 -Let the eggs cook until the whites are firm, about 2-3 minutes.

Step 11 -Top the egg mixture in the skillet with the cheese and the green onions.

Step 12 -Serve.
