Have you ever looked at your regular nachos and thought: "but what if we added more potatoes?" Well, Memphis Tot-chos thought that... and then went ahead and made some tasty changes! Instead of tortilla chips, crisp fluffy-on-the-inside tater tots form the bedrock of this house of flavor. Piled on top is a collection of Southern, Tennessee-inspired flavors — spicy pepper jack cheese, savory and tender pulled pork, and sweet and tangy barbecue sauce! Topped with cool and refreshing coleslaw, Memphis Tot-chos bring Tex-Mex and Southern snacking together for a great treat!
Ingredients
- 1 (28-ounce) package frozen bite-size potato nuggets or tater tots
- 2 cups pepper jack cheese, shredded
- 2 cups pulled pork, cooked, homemade or store-bought
- 1/2 cup white onion, chopped
- 1/4 cup pickled jalapeño peppers, chopped
- 1/2 cup barbecue sauce
- 1 cup prepared coleslaw, optional, for topping
- 1 bunch green onions, optional, sliced, for topping
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -On a large baking sheet, arrange the potato nuggets in a single layer.
Step 3 -Bake the potato nuggets for 20 minutes.
Step 4 -Shake the nuggets on the baking sheet and bake until they are extra-crispy, about 20-24 minutes.
Step 5 -Transfer the baking sheet from the oven.
Step 6 -Switch the oven to the broil setting.
Step 7 -Top the potato nuggets with the pepper jack cheese, the pulled pork, the onions, and the jalapeño peppers.
Step 8 -Drizzle the top of the tot-chos with the barbecue sauce.
Step 9 -Broil the tot-chos until the cheese starts to bubble, about 5-7 minutes.
Step 10 -Serve the tot-chos topped with the coleslaw and the green onions.
