Ma designed her recipe so that everyone could have their own loaf of delicious juicy meatloaf in a hurry! Ma's BBQ Meatloaves are done in 30 minutes or less, yet they're still packed with the tender, beefy flavors of a slow-cooked loaf. Saturated and topped with barbecue sauce and with just a touch of cheesiness, Ma's BBQ Meatloaves are sure to bring the family to the table in a flash, especially when served alongside mashed potatoes, green peas, and carrots!

Ingredients

  • 1 large egg, lightly beaten
  • 1/2 cup stuffing mix, crushed
  • 3 tablespoons milk, not skim
  • 2 tablespoons parmesan cheese, grated
  • 1 tablespoon plus 1/4 cup barbecue sauce, divided
  • 1 pound ground beef
  • mashed potatoes, optional, to taste, cooked and warm, for serving
  • carrots and peas, optional, to taste, cooked and warm, for serving

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -In a large bowl, combine the egg, the stuffing mix, the milk, the parmesan, and 1 tablespoon of the barbecue sauce.

Step 3 -Add the beef, mixing lightly but thoroughly, and shape the beef mixture into four 4x2-inch loaves.

Step 4 -Bake the loaves until a meat thermometer reads 160 degrees F when inserted into the thickest part.

Step 5 -Slather on the remaining barbecue sauce and serve with the mashed potatoes and the carrots and peas.
