Ingredients

  • For the rice:
  • 1 1/2 cups long-grain white rice
  • 2 cups chicken stock
  • 1 1/2 tablespoons light soy sauce
  • 1 tablespoon Chinese cooking wine
  • 2 cloves garlic, minced
  • 2 cups frozen diced vegetables
  • 1/4 teaspoon white pepper
  • 1 1/4 cups bacon, chopped
  • For the topping:
  • 1 tablespoon sesame oil
  • 1/2 cup green onion, finely sliced

Directions

Step 1 -Preheat the oven to 390 degrees F.

Step 2 -Place the white rice, the chicken stock, the soy sauce, the Chinese cooking wine, the garlic, the frozen vegetables, and the white pepper in a 9x13-inch baking dish and stir, spreading the rice evenly throughout the pan.

Step 3 -Scatter the bacon on top of the rice mixture.

Step 4 -Cover the baking dish with foil and bake for 40 minutes.

Step 5 -Remove the foil and bake until the bacon has darkened in color, the liquid is absorbed, and the rice is cooked but still appears wet.

Step 6 -Transfer the baking dish from the oven and let it rest loosely covered with foil for 10 minutes.

Step 7 -Add the sliced green onions and the sesame oil over top.

Step 8 -Fluff the rice and serve!
