When life hands you a basket of lemons, sure, go make your lemonade. But... if you have extra leftovers of those citrusy treats, you definitely need to make Lemon Linguine, too! This quick and easy, buttery, lemon-infused pasta dish will certainly bring the cheeriness you need. Sprinkled with the classic and iconic parmesan, Lemon Linguine will be turning that frown upside-down in a matter of minutes!
Ingredients
- 10 ounces linguine
- 4 cloves garlic, thinly sliced
- 1/4 cup flat-leaf parsley leaves, finely chopped
- 1 teaspoon lemon zest
- 2 teaspoons red pepper flakes
- 1 teaspoon kosher salt
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons salted butter
- 2 tablespoons fresh lemon juice
- parmesan cheese, to taste, freshly grated, for serving
Directions
Step 1 -In a large pot of salted, boiling water, cook the linguine to al dente, according to the package directions.
Step 2 -Reserve 1/2 cup of the pasta water and drain the rest.
Step 3 -While the linguine is cooking, in a large, heatproof bowl, add the garlic, the parsley, the lemon zest, the red pepper flakes, and the salt and stir to combine.
Step 4 -In a small saucepan over medium heat, add the oil and the butter and cook, stirring occasionally, until the butter is bubbling.
Step 5 -Pour the oil-butter mixture over the spice mixture and stir to combine.
Step 6 -Add the cooked linguine, the lemon juice, and the reserved pasta water to the sauce mixture and use tongs to toss until the pasta is fully coated and well-mixed.
Step 7 -Serve the linguine sprinkled with the parmesan.
