Baby, it's cold outside and you need something to warm you from the inside out! Well, Healthy Meatball Soup is the soul-warming answer to snuggle up to. It doesn't get any better than a taste of meatball in every spoonful of soup, surrounded by rich broth, some tender pasta, and bits of carrots for that satisfying dinner you're always looking forward to. So, the next time that chill is in the air, make some Healthy Meatball Soup to warm things up a bit. Grab a spoon and let's eat!
Ingredients
- 1 pound ground beef
- 1 teaspoon cumin
- 1 teaspoon ground coriander
- 2 teaspoons black pepper, divided, plus more, to taste
- salt, to taste
- 5 cups water
- 1 onion, chopped
- 1 teaspoon ground ginger
- 2 tablespoons mint, optional, minced
- 1/2 teaspoon ground turmeric
- 1 potato, chopped
- 1/2 cup bow tie pasta
- 1 carrot, chopped
Directions
Step 1 -In a large bowl, add the ground beef, the cumin, the coriander, 1 teaspoon of the black pepper, and the salt and use your hands to combine.
Step 2 -Form the beef mixture into 3/4-1-inch meatballs.
Step 3 -In a large pot, add the water and the salt. Then, add the meatballs, one at a time.
Step 4 -Add the onion, the remaining 1 teaspoon of black pepper, the ginger, the mint, and the turmeric to the soup mixture and cook until it reaches a boil, about 2-4 minutes.
Step 5 -Add the potatoes and the pasta to the soup mixture and cook, about 5 minutes.
Step 6 -Add the carrot to the soup mixture and cook until the potatoes are tender and the pasta is al dente, about 10 minutes.
Step 7 -Transfer about 1 cup of the soup to a blender, without any of the meatballs, and process until it is well-combined.
Step 8 -Pour the blended soup mixture into the soup and cook, stirring frequently, about 3-5 minutes.
Step 9 -Taste the soup and season with more of the salt and the extra black pepper, as needed.
Step 10 -Serve.
