Ingredients

  • 4 ounces rice noodles
  • 1/4 cup almond butter, can substitute peanut butter, tahini, or sunflower butter
  • 1 1/2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon honey, can substitute maple syrup
  • 1 tablespoon rice vinegar, can substitute lime juice
  • 2 teaspoons sriracha sauce, optional
  • 1/2 clove garlic
  • 2 tablespoons warm water, plus more, to taste
  • 2 cups kale, chopped
  • 2 cups coleslaw mix
  • 1 red pepper, chopped
  • 2 green onions, sliced
  • 1/4 cup cilantro leaves

Directions

Step 1 -In a pot of salted, boiling water, cook the rice noodles according to the package directions.

Step 2 -While the noodles are cooking, in a blender, add the almond butter, the soy sauce, the honey, the rice vinegar, the sriracha, the garlic, and 2 tablespoons of the warm water and blend until smooth.

Step 3 -If the dressing is too thick, add the extra warm water, a little at a time.

Step 4 -In a large bowl, add the cooked noodles, the kale, the coleslaw mix, the red peppers, the green onions, the cilantro, and the dressing and toss to combine.

Step 5 -Serve.
