Ingredients

  • For the shrimp skewers:
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup lime juice
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon chili garlic sauce
  • 2 pounds shrimp, peeled and deveined
  • For serving:
  • rice, to taste, of your choice, cooked and warm
  • 1/4 cup cilantro, freshly chopped
  • lime wedges, to taste

Directions

Step 1 -Preheat the grill to medium heat.

Step 2 -In a medium bowl, add the olive oil, the lime juice, the garlic, the honey, the soy sauce, and the chili sauce and whisk to combine.

Step 3 -Reserve 1/4 cup of the sauce for basting the shrimp while grilling.

Step 4 -In a large bowl, add the shrimp and the remaining sauce and toss to evenly coat.

Step 5 -Evenly thread the coated shrimp onto soaked wooden or metal skewers.

Step 6 -Grill the shrimp skewers, flipping occasionally and brushing them with the reserved sauce before and after each flip, until the shrimp are pink and opaque, about 3 minutes per side.

Step 7 -Scoop equal portions of the rice onto serving plates and top with the shrimp skewers.

Step 8 -Serve the shrimp skewers with the cilantro and the lime wedges.
