Ingredients

  • 1/4 cup extra-virgin olive oil
  • 20 cloves garlic, divided
  • 2 pounds chicken breast, boneless and skinless, fat trimmed and cut into 1-inch-thick pieces
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons parsley, chopped

Directions

Step 1 -In a medium skillet over low heat, heat the oil.

Step 2 -Add 15 of the garlic cloves to the skillet and cook, stirring every 5 minutes, for 20 minutes.

Step 3 -Evenly season the chicken pieces with the salt and the pepper.

Step 4 -Press the remaining garlic cloves into a small bowl and set aside.

Step 5 -Transfer the cooked garlic to a bowl, then drain and reserve the oil.

Step 6 -Add 1 tablespoon of the reserved oil back into the skillet and heat over high heat.

Step 7 -Add the chicken pieces to the oil in a single layer and cook, about 3-4 minutes.

Step 8 -Flip the chicken pieces over and cook until they reach an internal temperature of 165 degrees F, about 1 minute.

Step 9 -Stir the pressed garlic into the chicken and cook, stirring continuously, about 1-2 minutes.

Step 10 -Add the cooked garlic and the parsley to the chicken and toss to coat.

Step 11 -Serve immediately.
