Ingredients

  • For the beef and broccoli:
  • 1 tablespoon neutral-flavored oil
  • 1 pound ground beef chuck
  • 6 cups broccoli florets, stems trimmed
  • 2 large cloves garlic, finely chopped
  • 3 cups long-grain rice, cooked and cooled
  • 1 red bell pepper, sliced
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon light brown sugar
  • Optional, for garnish:
  • 4 scallions, thinly sliced
  • 1 teaspoon coarse salt
  • 1/4 teaspoon crushed red pepper

Directions

Step 1 -In a large skillet over high heat, add the oil.

Step 2 -Add the ground beef to the hot oil and press it into a thin layer covering the bottom of the skillet.

Step 3 -Cook the beef, undisturbed, until browned, about 3 minutes.

Step 4 -Stir the beef, slightly crumbling it.

Step 5 -Add the broccoli and the garlic to the beef and cook, while stirring occasionally, until the broccoli softens, about 6 minutes.

Step 6 -Add the rice and the bell pepper slices to the beef mixture and cook, while stirring often, until the rice is heated through and starts to brown, about 6 minutes.

Step 7 -In a small bowl, add the soy sauce, the vinegar, the sesame oil, and the brown sugar and stir to combine.

Step 8 -Add the soy sauce mixture to the beef mixture in the skillet and stir to coat.

Step 9 -Serve garnished with the scallions, the salt, and the crushed red pepper.
