Ingredients
- 2 pounds sweet potatoes, peeled and cut into 1/2-inch pieces
- 2 tablespoons coconut oil, melted
- 3/4 teaspoon fine sea salt
- 1 tablespoon light brown sugar, lightly packed
- fresh parsley leaves, optional, to taste, for garnish
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Add the sweet potatoes to a large sheet pan.
Step 3 -Add the melted coconut oil, the salt, and the brown sugar on top, tossing to coat the sweet potatoes.
Step 4 -Spread the sweet potatoes out to arrange in an even layer. Be sure the potatoes have space so they do not steam.
Step 5 -Roast, flipping every 10-15 minutes, until golden-brown and caramelized, about 27-35 minutes.
Step 6 -Carefully transfer the pan from the oven.
Step 7 -Serve topped with the fresh parsley leaves.
