Ingredients

  • 1 tablespoon salted butter, melted
  • 2 cups cranberries
  • 2 tablespoons brown sugar, plus more, to taste
  • 1/4 teaspoon ground cinnamon
  • 1 (17.3-ounce, 2-count) box frozen puff pastry, thawed
  • 1/3 cup fig preserves
  • 2 (8-ounce) wheels brie cheese, rind- on and each cut into 12 slices
  • 1 egg, beaten
  • coarse sugar, optional, to taste
  • fresh thyme, optional, to taste, for serving

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -Line a baking sheet with parchment paper.

Step 3 -In a medium bowl, combine the butter, the cranberries, the brown sugar, and the cinnamon.

Step 4 -Cut each of the puff pastry sheets into 6 equal rectangles.

Step 5 -Spread about 1 tablespoon of the fig preserves on each of the rectangles, leaving a 1/4-inch border around the edges.

Step 6 -Place 2 slices of the brie on top of the fig preserves.

Step 7 -Top the brie with the cranberry mixture, pressing the cranberries in slightly to adhere them.

Step 8 -Brush the edges of the puff pastry with the beaten egg. Sprinkle the edges with the coarse sugar.

Step 9 -Bake the puff pastries until the brie is melted and the puff pastry is golden-brown, about 15-20 minutes.

Step 10 -Remove the pastries from the oven and top with the thyme.

Step 11 -Serve warm!
