Ingredients

  • For the chicken:
  • 1 pound chicken breast, boneless, skinless, thinly sliced and halved
  • 1/4 teaspoon salt, plus more to taste
  • black pepper, to taste
  • 1 tablespoon flour
  • 2 tablespoons olive oil
  • For the sauce:
  • 1 1/2 cups heavy cream
  • 5 cloves garlic, minced
  • 1/2 cup parmesan, shredded
  • 4 cups fresh spinach
  • 1 tablespoon fresh thyme, optional, for garnish

Directions

Step 1 -Season the chicken with salt and pepper in a large shallow bowl.

Step 2 -Sprinkle the flour over the chicken and dredge both sides of the chicken in it.

Step 3 -Heat an empty, large, high-sided skillet over medium heat for 2 minutes.

Step 4 -Add the oil to the heated skillet.

Step 5 -Add the coated chicken breasts and cook on one side for 5 minutes without moving them.

Step 6 -Flip the chicken over and reduce the heat to medium-low.

Step 7 -Cook the chicken until an instant thermometer inserted into the thickest part reads 165 degrees F, about 5 minutes.

Step 8 -Transfer the chicken to a paper-towel-lined plate.

Step 9 -In the same skillet, add the heavy cream and the garlic.

Step 10 -Bring the cream mixture to a boil over medium heat, scraping the bottom of the skillet to incorporate the bits left from cooking the chicken.

Step 11 -Add the parmesan cheese to the boiling sauce.

Step 12 -Reduce the temperature to medium-low and keep stirring the sauce until the cheese melts, for about 2-4 minutes.

Step 13 -Add the spinach to the sauce and stir until the spinach begins to wilt and sinks into the sauce, about 1-2 minutes.

Step 14 -Season the sauce with salt and pepper as needed.

Step 15 -Place the cooked chicken into the sauce-filled skillet and spoon the sauce over the center.

Step 16 -Sprinkle with the thyme and season with more salt and pepper as needed.

Step 17 -Plate and serve.
