A chocolate muffin a day keeps the doctor away. That's how it goes, right? Whether or not it is the correct motto, we're gonna go with it, because we just love these Crackled Brownie Muffins so much. Warm, crumbly, and loaded with fudgy brownie flavor, these are the go-to for when the daily craving comes about. Crackled Brownie Muffins are definitely the way to a happy heart!
Ingredients
- water, to taste
- 1 stick unsalted butter
- 1/2 cup semisweet chocolate chips
- 2 eggs, room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/3 cup Dutch-processed unsweetened cocoa powder
- 1/4 teaspoon salt
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line six large muffin cups with liners.
Step 3 -In a small pot, bring the water to a simmer.
Step 4 -In a heatproof bowl, add the butter and the chocolate chips.
Step 5 -Place the bowl on the pot over the simmering water and cook, while stirring, until the chocolate mixture is melted and combined. Make sure the water is not touching the bottom of the bowl.
Step 6 -In a medium bowl, add the eggs, the granulated sugar, and the brown sugar and use an electric hand mixer to beat until it is pale and smooth, about 5-7 minutes.
Step 7 -Pour the melted chocolate mixture into the egg mixture and gently combine with a rubber spatula.
Step 8 -Sift the flour, the cocoa powder, and the salt into the muffin batter and fold it together with the rubber spatula.
Step 9 -Evenly pour the batter into the prepared muffin tin and bake, about 25 minutes.
Step 10 -Transfer the muffin tin to a wire rack and let the muffins cool until they are set.
Step 11 -Serve.
