  • For the crust:
  • 5 cups pretzels, crushed
  • 8 tablespoons butter, melted
  • 1/3 cup brown sugar
  • For the pie filling:
  • 1/4 cup cornstarch
  • 1 1/2 cups sugar
  • 1/4 cup teaspoon salt
  • 4 egg yolks
  • 3 cups milk
  • 7 ounces bittersweet chocolate, chopped
  • 2 teaspoons vanilla extract
  • 2 tablespoons butter
  • 2 tablespoons lemon juice

Directions

Step 1 -In a medium bowl, combine the pretzels, the melted butter, and the brown sugar.

Step 2 -Press the pretzel mixture into a 9-inch pie pan.

Step 3 -Bake the pie crust until golden, about 10 minutes.

Step 4 -Let the pie crust cool to room temperature.

Step 5 -In a medium saucepan, whisk the cornstarch, the sugar, and the salt.

Step 6 -Mix the egg yolks and the milk into the sugar mixture.

Step 7 -Heat the egg yolk mixture over medium heat.

Step 8 -Gently mix the pie filling until it thickens like a pudding, about 6-8 minutes.

Step 9 -Transfer the filling away from the heat and immediately add the chocolate, the vanilla, the butter, and the lemon juice. Mix until the ingredients are incorporated into a smooth pudding texture.

Step 10 -Pour the filling into the prepared pie crust and smooth with a spatula. If there is extra filling, it can be eaten immediately or chilled in the refrigerator.

Step 11 -Let the pie chill in the refrigerator, uncovered, for at least 4 hours and up to overnight.

Step 12 -Serve.
