  • For the roll-ups:
  • 1 tablespoon olive oil
  • 1 chicken breast, boneless and skinless
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 (8-ounce) package cream cheese, room temperature
  • 1/4 cup parmesan, freshly grated
  • 2 tablespoons chives, chopped
  • 1/2 teaspoon garlic powder
  • 1 (8-ounce) tube crescent rolls
  • 1/2 cup Italian-style breadcrumbs
  • For the cheese sauce:
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup milk
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1/2 cup cheddar cheese, shredded

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Line a baking sheet with parchment paper.

Step 3 -Heat the olive oil in a medium skillet over medium-high heat.

Step 4 -Season the chicken breasts with the salt and pepper.

Step 5 -Add the chicken breasts to the oil and cook, flipping once, until they reach an internal temperature of 165 degrees F, about 3-4 minutes per side.

Step 6 -Let the chicken breasts cool and then shred them.

Step 7 -In a large bowl, combine the shredded chicken, the cream cheese, the parmesan, the chives, the garlic powder, the salt, and the pepper.

Step 8 -Separate the rolls into 8 triangles and top each with a heaping tablespoon of the chicken mixture.

Step 9 -Starting with the wide end, roll the triangles up and tuck the ends of the dough underneath.

Step 10 -Dredge the roll-ups in the breadcrumbs and press to coat them.

Step 11 -Place the roll-ups, seam-side down, on the prepared baking sheet and bake until they are golden-brown, about 10-12 minutes.

Step 12 -While the roll-ups bake, melt the butter in a small saucepan over medium-high heat.

Step 13 -Whisk the flour into the butter until it has lightly browned, about 1 minute.

Step 14 -Gradually whisk the milk into the butter mixture, and cook, whisking constantly, until it slightly thickens, about 3-4 minutes.

Step 15 -Season the sauce mixture with the salt and pepper.

Step 16 -Stir the cheese into the sauce mixture, a handful at a time, until the cheese has melted and the sauce is smooth, about 1-2 minutes.

Step 17 -Serve the roll-ups drizzled with the cheese sauce.
