Dear mom and dad, we miss you but don't worry about us too much. We're having a blast so far at summer camp. Our roommates are nice (they smell a little funny, though) and at night they teach us new card games, which has been fun. The counselors really have our days jammed packed with cool things to do. We always start our mornings off with a hike around the lake and end our days singing by the campfire and making s'mores. Yesterday's afternoon activity was learning how to make the traditional Camp Bread. Apparently, they've been making it since the camp opened 30 years ago (that's so old!). It was really good! It was really fluffy and sort of tasted like that yummy, buttery cornbread mom makes, but with a little more seasoning and spices. Since it's a camp tradition, they gave us the recipe, so we thought we'd share it with you, too (see it below!). Anyway, we can't wait to be home. Maybe we can even share a piece of Camp Bread as we tell you all about the memories we've made this week. Sounds like fun to us. Love you and see you soon!
Ingredients
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 4 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 teaspoon rubbed sage
- 1 teaspoon dried thyme
- 1 1/2 cups yellow cornmeal
- 1 1/2 cups celery, chopped
- 1 cup onion, chopped
- 1 (2-ounce) jar chopped pimientos, drained
- 3 large eggs, room temperature, beaten
- 1 1/2 cups fat free milk
- 1/3 cup vegetable oil
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Grease a 10-inch oven-safe skillet.
Step 3 -In a large bowl, add the flour, the sugar, the baking powder, the salt, the sage, and the thyme and stir to combine.
Step 4 -In another bowl, add the cornmeal, the celery, the onion, and the pimientos and stir to combine.
Step 5 -Add the celery mixture to the flour mixture and mix well.
Step 6 -Add the eggs, the milk, and the oil to the batter and stir until it is just moistened.
Step 7 -Pour the batter into the prepared skillet.
Step 8 -Bake the bread until a toothpick inserted into the center comes out clean, about 35-45 minutes.
Step 9 -Serve the bread warm.
