Cajun Chicken Pasta coats savory chicken in a spice mixture positively jumping with spicy flavors, served atop a creamy, cheesy pasta. With notes of citrus brightness and aromatic garlic and pepper, Cajun Chicken Pasta starts a party on your taste buds that you won't want to stop. It's a big band of tastes you can bring together in just 30 minutes, so your weeknights will start having the good times roll!
Ingredients
- 8 ounces penne pasta
- 2 chicken breasts, boneless and skinless
- 4 teaspoons cajun seasoning
- 4 tablespoons butter, divided
- 3 cups half-and-half
- 1/2 teaspoon lemon pepper seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 teaspoon garlic powder
- 2 tomatoes, diced, for topping
- 1/2 cup parmesan cheese, shredded, for topping
Directions
Step 1 -Cook the penne until al dente, according to the package directions.
Step 2 -Drain the pasta.
Step 3 -Place the chicken breasts in a large resealable plastic bag.
Step 4 -Add in the cajun seasoning and shake thoroughly to evenly coat the chicken.
Step 5 -In a large skillet over medium heat, add 2 tablespoons of the butter and allow it to melt.
Step 6 -Add in the chicken and sauté until golden-brown and cooked through at 165 degrees F, about 5 minutes per side.
Step 7 -In a separate skillet over medium heat, combine the half-and-half, the remaining butter, the lemon pepper seasoning, the salt, the pepper, and the garlic powder, stirring occasionally.
Step 8 -Remove the cream mixture from the heat when it starts to bubble.
Step 9 -Pour the cream sauce over the cooked penne.
Step 10 -Slice the chicken into strips.
Step 11 -Place the pasta on serving plates.
Step 12 -Top the pasta with the chicken, the diced tomatoes, and the parmesan.
