  • 1 tablespoon unsalted butter
  • 2 pounds white or sweet potatoes, peeled and cut into 3/4-inch cubes
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon fresh thyme, chopped
  • salt, to taste
  • ground black pepper, to taste

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Place the butter on a sheet pan and melt in the oven as it preheats, about 2 minutes.

Step 3 -Transfer the baking sheet from the oven.

Step 4 -In a bowl, toss the potatoes with the olive oil and the thyme.

Step 5 -Add the potatoes to the sheet pan and use a spatula to evenly toss them in the melted butter.
