Ingredients
- 8 ounces linguine or spaghetti
- 1/2 teaspoon freshly ground black pepper, plus more, to taste
- 1/2 cup Pecorino Romano, shredded, plus more, optional, to taste, for topping
- salt, to taste
- dried parsley, optional, to taste, for garnish
Directions
Step 1 -In a large pot of salted, boiling water, cook the pasta to al dente, according to the package directions.
Step 2 -Reserve 2 cups of the pasta water and drain the rest.
Step 3 -In a large skillet over medium heat, add 1/2 teaspoon of the pepper and heat until it is fragrant, about 1 minute.
Step 4 -Add 1/2 cup of the pasta water to the pepper, then reduce the heat to low. Simmer, about 2-3 minutes.
Step 5 -In a small bowl, add 1/2 cup of the Pecorino Romano and 1/2 cup of the pasta water and stir to create a slurry.
Step 6 -Increase the heat to medium-low, then stir the cooked pasta into the pepper mixture. Add the remaining pasta water, as needed, until the mixture becomes saucy.
Step 7 -Stir the slurry into the pasta mixture, adding the remaining pasta water, as needed, to achieve a creamy consistency.
Step 8 -Taste the pasta mixture and season with the salt and the extra pepper, as needed. Stir to combine.
Step 9 -Serve sprinkled with the extra Pecorino Romano and the parsley.
