  • 2 tablespoons butter
  • 3 cups potatoes, peeled and cut into wedges
  • 1 cup carrots, peeled and cut into 1/4-inch slices
  • 1/2 cup celery, diced
  • 1/2 cup onions, coarsely chopped
  • 1/2 teaspoon fresh garlic, finely chopped
  • 2 cups leftover roast beef, cut into 3/4-inch cubes
  • 1/2 cup water
  • 1/4 cup ketchup
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon instant beef bouillon
  • 1/2 teaspoon black pepper
  • 1 cup cheddar cheese, shredded

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -In a 12-inch skillet over medium heat, melt the butter until it sizzles.

Step 3 -Add the potatoes, the carrots, the celery, the onions, and the garlic to the melted butter and cook, while stirring occasionally, until the vegetables have softened, about 6-8 minutes.

Step 4 -Add the roast beef pieces, the water, the ketchup, the parsley, the Worcestershire sauce, the beef bouillon, and the black pepper to the vegetable mixture, stirring to combine.

Step 5 -Add the beef mixture to a 2-quart casserole dish.

Step 6 -Cover the casserole dish and bake until heated through, about 30-40 minutes.

Step 7 -Sprinkle the beef mixture with the cheddar cheese and immediately cover the casserole dish.

Step 8 -Let the casserole stand until the cheese melts, about 2-3 minutes.
