  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 medium zucchini, cut into sticks
  • 1 cup breadcrumbs
  • 1/2 cup parmesan cheese, grated
  • ranch dressing, optional, to taste, for serving

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -Use parchment paper to line a baking sheet.

Step 3 -Beat the egg in a shallow bowl or plate and season with the salt and the pepper.

Step 4 -In another shallow bowl or plate, combine the breadcrumbs together with the parmesan cheese and season it with the salt and the pepper.

Step 5 -Dip each zucchini stick in the egg wash, and then roll in the breadcrumb mixture. Cover each stick fully with breadcrumbs by rolling and pressing to adhere.

Step 6 -Place the coated sticks on the prepared baking sheet.

Step 7 -Transfer the baking sheet to the oven and bake until golden and crispy, about 20-25 minutes.

Step 8 -Serve with the ranch dressing.
