Ingredients

  • For the breading:
  • 3/4 cup panko breadcrumbs
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1 tablespoon butter, melted
  • For the chicken:
  • 2 pounds chicken breast cutlets
  • salt, to taste
  • pepper, to taste
  • 1 tablespoon mayonnaise
  • For the honey dip:
  • 2 tablespoons honey
  • 1/2 teaspoon red pepper flakes, optional

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -In a bowl, add the panko, the paprika, the garlic powder, 1/2 teaspoon of the salt, and the onion powder.

Step 3 -Pour the melted butter over the seasoned crumb mixture and mix until combined. Set the breading mixture aside.

Step 4 -Season each side of the chicken with the extra salt and the pepper.

Step 5 -Lay the chicken flat on a large baking sheet and spread a very thin coat of the mayonnaise over each chicken cutlet.

Step 6 -Place each chicken cutlet into the breading mixture, flipping as needed to coat all sides, then return the breaded cutlets to the baking sheet.

Step 7 -Spoon any remaining breading over the top of each chicken breast and pat to secure the breading to the chicken.

Step 8 -Bake until the chicken has reached an internal temperature of 165 degrees F, about 10-15 minutes.

Step 9 -In a bowl, add the honey and the red pepper flakes and mix to combine.

Step 10 -Drizzle the honey sauce over the baked chicken or serve as a dipping sauce.
