Oh goodness, she's about to lure us back in again! Aunt Betty's Cheesecake Bites are so tempting, and just "a little ol' bite won't hurt" away from getting us hooked! Crushed vanilla wafers start the crust layer, but then there is the creamy cheesecake filling, which is luscious, smooth, and tangy... and that topping of your favorite cherry pie filling seals the deal! Ingredients

  • 1 (12-ounce) package vanilla wafers
  • 2 (8-ounce) packages cream cheese, room temperature
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 (21-ounce) can cherry pie filling, optional, for topping

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line the cups of a miniature muffin pan with paper liners.

Step 3 -In the container of a food processor, add the vanilla wafers and process until crushed.

Step 4 -In the bottom of each of the liners, add about 1/2 teaspoon of the crushed vanilla wafers.

Step 5 -In large bowl with an electric mixer on medium-high speed, add the cream cheese, the granulated sugar, the eggs, and the vanilla extract and beat until light and fluffy.

Step 6 -Leaving a little space just at the top of the paper liners, evenly add the cream cheese mixture on top of the crushed vanilla wafer layer in each muffin well. Make sure to smooth out the tops.

Step 7 -Bake the bites for 15 minutes.

Step 8 -Transfer the bites from the oven to a wire rack and let them cool until they are set, about 1 hour.

Step 9 -Serve topped with the cherry pie filling.
