Abuela shared her favorite way to wake up in the morning, which will swiftly become yours as well! Abuela’s Huevos Rancheros is filled with traditional Mexican flavors: savory black beans, golden fried eggs, and smooth avocado on top of corn tortillas. With a touch of heat from hot sauce and salty cotija cheese, Abuela’s Huevos Rancheros is a peppy and flavorful way to get your morning moving. Best of all, it only takes 30 minutes or less to see the dawn of a new breakfast on the table.
Ingredients
- 2 (15-ounce) cans black beans, drained and rinsed
- 1 1/2 cups salsa, of your choice,
- 1/2 teaspoon salt
- 8 corn tortillas
- 4 eggs, fried over medium
- Optional toppings:
- salsa, to taste
- cotija cheese, to taste
- cilantro leaves, to taste
- avocado, to taste, chopped
- hot sauce, to taste
Directions
Step 1 -In a medium skillet on the stovetop over medium heat, add the black beans, 1 1/2 cups of the salsa, and the salt.
Step 2 -Stir the bean mixture and bring it to a simmer. Cook until most of the liquid has been absorbed, about 5-7 minutes.
Step 3 -In a dry, separate skillet set over medium heat, warm the tortillas until they are soft with brown edges.
Step 4 -On a plate, add the tortillas and top each with about 1 cup of the bean mixture and one of the fried eggs.
Step 5 -Repeat with the remaining ingredients.
Step 6 -Serve with the remaining salsa the cotija cheese, the avocado, the cilantro, and the hot sauce.
