Ingredients
- 2 teaspoons olive oil
- 1 (8-ounce) carton mushrooms, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 cups dairy-free sour cream
- browning sauce, optional, to taste
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 (12-ounce) packages frozen cut green beans, thawed
- 4 cups dairy-free cheddar-flavored cheese, shredded
- 1/4 cup dairy-free buttery spread, melted
- 1 cup butter crackers, crushed
- 1 cup crispy fried onions, coarsely chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -Heat a large skillet over medium heat and add the oil to the skillet.
Step 4 -Add the mushrooms and the onions to the skillet and sauté until they are tender.
Step 5 -Add the garlic to the skillet and cook, stirring frequently, until it is fragrant, about 1 minute.
Step 6 -Add the sour cream, the browning sauce, the salt, and the pepper to the vegetable mixture and stir to combine.
Step 7 -Add the green beans and the cheese to the vegetable mixture and stir to coat.
Step 8 -Transfer the vegetable cheese mixture to the prepared baking dish.
Step 9 -In a small bowl, combine the buttery spread, the butter crackers, and the fried onions, and then sprinkle the cracker mixture on top of the casserole.
Step 10 -Bake the casserole until it is bubbly and the top is golden-brown, about 25-30 minutes.
