Ingredients

  • For the cakes:
  • 2/3 cup shortening
  • 1 1/4 cups sugar
  • 2 eggs
  • 2 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1/4 teaspoon cream of tartar
  • 1 1/4 teaspoons vanilla
  • 1/4 teaspoon almond extract
  • 1 cup milk
  • For the filling:
  • 3 tablespoons flour
  • 3/4 cup milk
  • 3/4 cup solid white shortening
  • 1 cup sugar
  • 1 teaspoon vanilla

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Grease a cookie sheet.

Step 3 -Cream the 2/3 cup of the shortening, 1 1/4 cup of the sugar, and 2 eggs. Beat until light and fluffy.

Step 4 -Sift together the 2 1/2 cups of the flour, the cocoa, baking soda, and cream of tartar.

Step 5 -Mix the 1 1/4 teaspoon of the vanilla and the almond extract into the 1 cup of the milk.

Step 6 -Add the dry ingredients mixture and the milk mixture to the creamed mixture, a little at a time and alternating between the two, being careful not to overmix.

Step 7 -Drop the batter 1 tablespoon at a time on the prepared cookie sheet.

Step 8 -Bake until cooked through, about 10-12 minutes. Let the cakes cool.

Step 9 -On the stove, mix the 3 tablespoons of the flour and the 3/4 cup of the milk until very thick, stirring constantly. Cool to cold.

Step 10 -Beat in the 3/4 cup of the solid white shortening, 1 cup of the sugar, and the 1 teaspoon of the vanilla until light and fluffy.

Step 11 -Sandwich your cakes with the filling and serve!
