Super tender potatoes are essentially braised in a garlic-infused cream sauce and topped with sharp cheddar and parmesan; how could that not be the greatest? You might just be tempted to skip the main course and indulge in more of The GOAT Bake! You won't regret it!

Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium onion, 1/4-inch diced
  • 6 cloves garlic, minced
  • 2 cups whole milk
  • 2 teaspoons kosher salt, divided
  • 1/4 teaspoon ground black pepper
  • 3 pounds Yukon gold potatoes, peeled
  • 3 tablespoons all-purpose flour
  • 6 ounces sharp cheddar cheese, shredded
  • 1 ounce parmesan cheese, shredded

Directions

Step 1 -Place a rack in the center of the oven.

Step 2 -Preheat the oven to 375 degrees F.

Step 3 -Coat a 9x13-inch casserole dish with nonstick spray.

Step 4 -In a medium pot or a wide skillet with high sides, heat the butter over medium-low heat.

Step 5 -Add the onion and cook, stirring often, until translucent and starting to turn golden, about 8-10 minutes.

Step 6 -Stir in the garlic and cook until just fragrant, about 1 minute.

Step 7 -Turn off the heat.

Step 8 -Stir in the milk, 1 teaspoon of the salt, and the pepper.

Step 9 -Allow the milk mixture to cool.

Step 10 -With a mandolin or a very sharp knife, slice the potatoes into very thin slices, about 1/8-1/4-inch-thick.

Step 11 -Place the potatoes in a large bowl and sprinkle with the flour and the remaining salt.

Step 12 -Toss the potatoes to coat them as evenly as possible.

Step 13 -Spread 1/3 of the potatoes evenly in the bottom of the prepared casserole dish.

Step 14 -Spoon 1 cup of the milk mixture over the potato layer in the casserole dish.

Step 15 -Sprinkle the casserole dish with 1/2 cup of the cheddar cheese.

Step 16 -Repeat the layers twice.

Step 17 -Lightly spray a sheet of foil with nonstick spray.

Step 18 -Cover the dish with the greased foil (greased-side down) and bake covered for 35 minutes.

Step 19 -Uncover and bake until the potatoes are fork-tender, about 35 minutes.

Step 20 -Sprinkle the parmesan cheese over the bake.

Step 21 -Switch the oven to broil and broil until the cheese is golden-brown and bubbly, about 1-3 minutes.

Step 22 -Let the potatoes rest at room temperature for 20-25 minutes.

Step 23 -Slice and serve.
