Ingredients

  • 1/2 pound bacon, chopped into 1-inch pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 2 pounds fresh green beans, ends trimmed
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons butter
  • parmesan, to taste, shaved, for serving

Directions

Step 1 -In a large saucepan over medium heat, add the bacon pieces and cook, stirring occasionally, until they are golden-brown and crispy, about 5-6 minutes.

Step 2 -Add the onions to the bacon pieces and cook, stirring occasionally, until the onions soften slightly, about 2 minutes.

Step 3 -Add the garlic to the bacon mixture and cook, while stirring, about 1 minute.

Step 4 -Pour the bacon mixture into a clean bowl and set it aside. Leave as much of the cooking juices in the pan as possible.

Step 5 -In the same saucepan over medium heat, add the green beans, the chicken broth, the salt, and the pepper and stir to combine. Bring the green bean mixture to a boil.

Step 6 -Cover the saucepan and reduce the heat to low. Let the green beans simmer, about 1 hour.

Step 7 -Strain the chicken broth from the green beans, then return the green beans to the saucepan.

Step 8 -Add the reserved bacon mixture and the butter to the green beans and stir until the butter is melted and the mixture is combined.

Step 9 -Serve the green beans topped with the parmesan.
