It doesn't get much easier than the Simple Greens Salad. Crisp butter lettuce, sharp chives, tangy olives, and crunchy pistachios make for a refreshing and nourishing salad. When they're topped with a sweet and tangy shallot vinaigrette, you'll be thinking green for sure! Simple Greens Salad may be simple to make, but it really has some delicate and deep flavors!

Ingredients

  • For the shallot vinaigrette:
  • 1/3 cup extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 2 tablespoons shallots, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon sea salt
  • freshly cracked black pepper, to taste
  • For the salad:
  • 1 (6-ounce) package butter lettuce mix
  • 2 tablespoons chives, minced
  • 1 cup small green olives, pitted
  • 1/4 cups honey-roasted pistachios, such as Wonderful® Honey Roasted Pistachios, chopped
  • freshly cracked black pepper, to taste, for serving

Directions

Step 1 -In a large bowl, add the olive oil, the Dijon mustard, the honey, the shallots, the lemon zest, the lemon juice, the salt, and the black pepper and whisk vigorously until the dressing is emulsified.

Step 2 -Add the lettuce to the dressing and toss to completely coat.

Step 3 -Sprinkle the salad with the chives, the green olives, and the pistachios.

Step 4 -Serve topped with the black pepper.
