Date night doesn't need to require going out on the town or breaking the bank. All it needs is something special shared between you and your loved one, a dish that blushes the way you do when you see them. Romance Pasta is simple and elegant and just plain delicious; a creamy, rich, vibrant tomato sauce with notes of parmesan and garlic coating tender pasta. The pink hue of Romance Pasta will certainly conjure up the feeling of candlelit dinners, whether you have candles or not! Share in the warm and fuzzy feelings!
Ingredients
- 1 teaspoon olive oil
- 1 teaspoon butter
- 1 yellow onion, finely diced
- 3 cloves garlic, minced
- 1/4 cup white wine, optional
- 1 1/2 cups tomato purée, can substitute tomato passata
- 1 bay leaf
- 1/2 teaspoon dried basil
- 8 ounces pasta, of your choice
- 1/2 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- fresh parsley leaves, optional, to taste, for garnish
Directions
Step 1 -In a large pot over medium-low heat, heat the oil and the butter.
Step 2 -Add the onions and cook, while stirring often, until soft and golden but not browned, about 7 minutes.
Step 3 -Add the garlic and cook until fragrant, about 1 minute.
Step 4 -Add the wine and cook until bubbly and slightly reduced, about 3-4 minutes.
Step 5 -Stir in the tomato purée, the bay leaf, and the basil and simmer for 15 minutes.
Step 6 -Cook the pasta to al dente, according to the package directions.
Step 7 -Drain the pasta, reserving about 1/2 cup of the cooking water.
Step 8 -Remove and discard the bay leaf from the sauce.
Step 9 -Stir in the heavy cream, the parmesan, the salt, and the pepper.
Step 10 -Simmer the sauce for 2 minutes.
Step 11 -Add the pasta and the reserved pasta water to the sauce and stir to combine.
Step 12 -Serve warm, garnished with the parsley.
