Ingredients
- 3 ounces prosciutto
- 6 tablespoons unsalted butter
- 6 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup whole milk
- 1 tablespoon Dijon mustard
- 1 1/2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 2 pounds chicken breast, boneless and skinless, cut into 1-inch cubes
- 8 ounces ham, cooked and cubed
- 4 cups Swiss cheese, shredded, divided
- 1 cup panko breadcrumbs
- fresh parsley, chopped, to taste, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a rimmed baking sheet and a 9x13-inch baking dish with nonstick cooking spray.
Step 3 -Evenly spread the prosciutto out in a single layer on the prepared baking sheet, ensuring there is no overlap.
Step 4 -Bake the prosciutto until it is crispy, about 10-15 minutes.
Step 5 -Transfer the baking sheet to a wire rack and let the prosciutto cool.
Step 6 -In a large saucepan over medium heat, melt the butter.
Step 7 -Add the flour to the melted butter and cook, while whisking, until it is light brown in color and toasted, about 2 minutes.
Step 8 -Pour the chicken broth and the milk into the flour mixture and simmer, whisking occasionally, until it has thickened, about 4-6 minutes.
Step 9 -Add the Dijon mustard, the salt, and the pepper to the sauce mixture and whisk to combine.
Step 10 -Add the chicken cubes and the ham cubes to the sauce mixture and bring to a simmer. Cook, stirring occasionally, until the chicken reaches an internal temperature of 165 degrees F, about 9-11 minutes.
Step 11 -Stir 2 cups of the Swiss cheese into the chicken mixture.
Step 12 -Evenly pour the chicken mixture into the prepared baking dish.
Step 13 -Evenly sprinkle the chicken mixture with the remaining Swiss cheese.
Step 14 -In a small bowl, add the cooled prosciutto and use the handle of a wooden spoon to crush it into fine crumbs.
Step 15 -Add the breadcrumbs to the crushed prosciutto and toss to combine.
Step 16 -Evenly sprinkle the prosciutto mixture over the chicken mixture.
Step 17 -Bake the chicken mixture until the filling is bubbling and the topping is golden-brown, about 30-35 minutes.
Step 18 -Serve garnished with the parsley.
