Ingredients

  • 2 pounds carrots, washed and halved
  • 1/4 cup olive oil
  • 4 large cloves garlic, minced
  • 1/4 cup parmesan cheese, grated
  • 2 tablespoons panko breadcrumbs
  • salt, to taste
  • pepper, to taste
  • fresh parsley, optional, to taste, chopped

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Lightly grease a baking sheet with cooking oil spray.

Step 3 -Arrange the carrots on the prepared baking sheet.

Step 4 -Add the olive oil, the garlic, the parmesan, the breadcrumbs, the salt, and the pepper over the carrots and toss to coat.

Step 5 -Spread the carrots out and bake, tossing halfway through, until they are tender, about 20-25 minutes.

Step 6 -Transfer the carrots from the oven and top with the fresh parsley.

Step 7 -Serve.
