  • For the salad:
  • 5 cups fresh kale, chopped
  • 3 cups romaine, torn
  • 1 (14-ounce) package coleslaw mix
  • 1 medium fennel bulb, thinly sliced
  • 1 cup fresh broccoli, chopped
  • 1/2 cup red cabbage, shredded
  • 1 cup feta cheese, crumbled
  • 1/4 cup sesame seeds, toasted
  • fresh strawberries, optional, sliced, for topping
  • For the dressing:
  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons sesame oil
  • 2 tablespoons honey
  • 2 tablespoons cider vinegar
  • 2 tablespoons lemon juice
  • 1/3 cup strawberries, puréed

Directions

Step 1 -Combine the kale and the romaine.

Step 2 -Add the coleslaw mix, the fennel, the broccoli, and the red cabbage.

Step 3 -Sprinkle in the feta cheese and the sesame seeds and toss to combine.

Step 4 -In a separate bowl, stir together the olive oil and the sesame oil.

Step 5 -Whisk the honey, the vinegar, and the lemon juice into the oil mixture.

Step 6 -Add the puréed strawberries into the dressing mixture and whisk to combine.
