Mint, lemon, olive oil, salt, and pepper take asparagus from a regular old garden veggie to a scrumptious side dish that you'll truly enjoy. Minty Asparagus will pair perfectly with any entrée of your choice, and it's sure to wow your taste buds!
Ingredients
- 2 tablespoons olive oil
- 1 pound asparagus, trimmed and cut into 3-inch pieces
- 2 tablespoons mint, chopped
- 1/2 lemon, juiced
- salt, to taste
- ground black pepper, to taste
Directions
Step 1 -Heat the olive oil in a large, shallow pan over medium heat.
Step 2 -When the oil is hot, arrange the asparagus evenly over the bottom of the pan.
Step 3 -Cook for 2-3 minutes, then stir once.
Step 4 -Continue cooking, stirring as needed, until the asparagus are bright green and tender, about 6-8 minutes.
Step 5 -Stir in the mint and cook until fragrant, about 30 seconds.
Step 6 -Remove the pan from the heat.
Step 7 -Squeeze the lemon juice over the asparagus.
Step 8 -Season the asparagus with the salt and the pepper.
Step 9 -Serve!
