Ingredients
- For the streusel topping:
- 2/3 cup light brown sugar, packed
- 2/3 cup all-purpose flour, spooned and leveled
- 2 cups cinnamon-sugar cereal, crushed
- 1 teaspoon ground cinnamon
- 1 cup unsalted butter, melted
- For the casserole:
- 1 loaf French bread, sourdough, or challah
- 8 large eggs
- 2 1/4 cups whole milk
- 1 teaspoon ground cinnamon
- 1/2 cup light brown sugar, packed
- 1 tablespoon vanilla extract
Directions
Step 1 -Line a baking sheet with parchment paper.
Step 2 -In a large bowl, combine the 2/3 cup of the light brown sugar, the flour, the cereal, 1 teaspoon of the cinnamon, and the butter using a rubber spatula. The mixture should become wet and gritty.
Step 3 -Pour the streusel mixture onto the prepared baking sheet to dry slightly.
Step 4 -Spray a 9x13-inch pan with nonstick spray.
Step 5 -Slice and cube the bread into 1-inch pieces.
Step 6 -Spread the bread cubes in the prepared baking pan.
Step 7 -Whisk the eggs, the milk, the remaining cinnamon, the remaining brown sugar, and the vanilla together until no lumps remain.
Step 8 -Pour the milk mixture over the bread.
Step 9 -Cover the pan with plastic wrap and chill in the refrigerator for at least 3 hours and up to overnight.
Step 10 -Preheat the oven to 350 degrees F.
Step 11 -Transfer the pan from the refrigerator and discard the plastic wrap.
Step 12 -Sprinkle the streusel topping on top of the casserole.
Step 13 -Bake until golden-brown on top, about 45-55 minutes.
