When the clock strikes 12, you know what to do! Midnight Kiss Bites will be waiting patiently for you! When ladyfingers, orange zest, mascarpone cheese, and espresso come together and get romantically dipped in semi-sweet chocolate, well, pucker up! The minute you put your lips on these, you know it's going to be good. Midnight Kiss Bites are so exhilaratingly delicious! You will absolutely be coming back for more! Let's not wait any longer!
Ingredients
- 24 ladyfingers
- 2 tablespoons sugar
- 1/4 teaspoon sea salt
- 1 orange, zested
- 1/2 cup mascarpone cheese, room temperature
- 2 tablespoons espresso or strong coffee
- 2 cup semi-sweet chocolate chips
Directions
Step 1 -Line an 18x26-inch baking sheet with parchment paper.
Step 2 -In the container of a food processor, add the ladyfingers, the sugar, and the salt and process until a fine crumb mixture forms.
Step 3 -In a small bowl, reserve 2 tablespoons of the crumb mixture.
Step 4 -Add the orange zest, the mascarpone cheese, and the espresso to the remaining ladyfinger crumb mixture in the food processor, then blend until fully incorporated and the texture resembles that of soft cookie dough (not wet or sticky).
Step 5 -By hand, shape the ladyfinger mixture into 20 (1-inch) ball-like bites and transfer the balls to the prepared baking sheet.
Step 6 -Transfer the bites to the freezer and chill until firm, about 10 minutes.
Step 7 -In a double boiler, add the chocolate chips and melt while stirring constantly.
Step 8 -Transfer the melted chocolate from the stove-top to a wire rack.
Step 9 -Immediately, stick skewers into the cold bites and dip the bites one at a time into the melted chocolate, twirling them on the side of the bowl.
Step 10 -Transfer each of the coated bites back to the prepared baking sheet, using a second skewer to remove the ball from the first skewer.
Step 11 -Evenly sprinkle the bites with the reserved crumble mixture.
Step 12 -Transfer the coated bites to the refrigerator and let chill until the chocolate hardens, about 10 minutes.
Step 13 -Serve.
