Ingredients
- 1/4 large red onion, cut into 1 1/2-inch chunks and separated
- 1/2 red bell pepper, cut into 1 1/2-inch cubes
- 1/2 green bell pepper, cut into 1 1/2-inch cubes
- 1/2 yellow bell pepper, cut into 1 1/2-inch cubes
- 1/2 orange bell pepper, cut into 1 1/2-inch cubes
- 1 (12-ounce) salmon fillet, cut into 1 1/2-inch chunks
- 2 tablespoons olive oil
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 lemon, optional, sliced into wheels, for serving
Directions
Step 1 -Preheat the grill to medium heat.
Step 2 -On four wooden-soaked or metal skewers, alternate adding the onions, the red bell peppers, the green bell peppers, the yellow bell peppers, the orange bell peppers, and the salmon chunks, leaving room at each end of the skewers.
Step 3 -Evenly brush the skewers on all sides with the olive oil.
Step 4 -Season each of the skewers all over with the salt and the pepper.
Step 5 -Add the skewers to the hot grill and cook, turning them once, until the salmon reaches an internal temperature of 145 degrees F and the vegetables are softened, about 5 minutes per side.
Step 6 -Transfer the skewers from the grill.
Step 7 -Serve the skewers with the lemon slices.
