Let's add some life back into your side dish game. These Greek Lemon Potatoes are the perfect way to perk things up! Easily seasoned with garlic, oregano, and the perfect touch of lemon, these crispy potatoes go well with any main meat dish that you have in mind. Greek Lemon Potatoes will become the most requested potato pick for all of your wonderful gatherings. Everyone is going to love them!
Ingredients
- 10 medium potatoes, peeled and sliced into wedges
- 1 1/2 cups chicken stock
- 1/4 cup olive oil
- 1/3 cup lemon juice, freshly squeezed
- 1 clove garlic
- 1 tablespoon dried oregano
- 2 teaspoons salt
- pepper, to taste
- fresh herbs, such as oregano sprigs, to taste, for garnish
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -In a roasting pan, add the potato wedges, the chicken stock, the olive oil, the lemon juice, the garlic, the dried oregano, the salt, and the pepper and toss to coat.
Step 3 -Bake the potato wedges for 30 minutes.
Step 4 -Flip the potato wedges over and bake until golden, for 30 minutes. To achieve an even deeper color, bake for an additional 30 minutes.
Step 5 -Transfer the potato wedges from the oven and let them cool for 10 minutes.
Step 6 -Serve the potatoes garnished with the fresh herbs.
