Ingredients

  • 2 tablespoons olive oil
  • 6 chicken thighs, skinless
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 medium onion, sliced
  • 1 cup chicken stock
  • 1/2 cup white wine
  • 1 (14.5-ounce) can crushed tomatoes in thick purée
  • 1 teaspoon dried thyme
  • 1/2 tablespoon dried rosemary
  • 1 tablespoon lemon-pepper
  • rice, to taste, cooked, hot, and buttered
  • 2 tablespoons fresh parsley leaves, chopped

Directions

Step 1 -Heat the olive oil in a 12-inch skillet over medium-high heat.

Step 2 -Pat the chicken dry with a paper towel and season with the salt and the pepper.

Step 3 -Brown the chicken in the hot oil, 4 minutes on each side.

Step 4 -Transfer the chicken to a plate and drain all but 1 tablespoon of the oil from the skillet.

Step 5 -Add the onion to the skillet and sauté until tender, about 3 minutes.

Step 6 -Add the stock and the wine to the onion and stir, scraping any brown bits off the bottom of the pan.

Step 7 -Turn the heat to high and reduce the onion mixture by half, about 3 minutes.

Step 8 -Add the crushed tomatoes, the thyme, the rosemary, the lemon-pepper, and the browned chicken thighs into the onion mixture.

Step 9 -Cover the skillet and cook on medium-low heat until the chicken internally reaches 165 degrees F and is tender, about 40 minutes.

Step 10 -Serve the chicken and the sauce on top of the rice and sprinkle with the parsley.
